Freezer Jam question

Maybe I'm just going to show off my nerdy side here by asking this question. A friend suggested that I could make freezer jam out of frozen fruit. Sounds great, since it means I could make it any time of the year.

But I'm worried about thermotropic bacteria.

They're the reason you're not supposed to eat frozen pizza without cooking it. Or refreeze things that you've thawed. Thermotrophic bacteria don't die in freezing temperatures, proliferate when the food warms up, and then doesn't die again when you freeze it. So the more you thaw and refreeze, the more bacteria you end up with.

And the most dangerous thing about them is that they thrive at 98 degrees. Meaning they can infect our bodies.

One comforting thought is that the package of frozen fruit does not warn that its contents must be cooked before eating.

Am I just a microbiology nerd? Should I just turn off my overactive brain and make freezer jam out of frozen strawberries?

I have made frozen jam from frozen fruit before and it is so yummy. I have never had a problem. But, maybe we eat it faster than letting it go bad. :)

I haven't had anybody get sick yet. But, I don't know. :) Maybe fruit is different cause it isn't like meat or something that might come on pizza?
