Strawberry freezer jam!

I got some strawberries on sale yesterday, so I also bought some freezer jam pectin. Oh my gosh, I'm so excited! Strawberry freezer jam is the absolute best jam in the entire world. Along with my mom's biscuits and snickerdoodles, freezer jam is a food highlight of my childhood. I remember my mom buying flats of strawberries at the side of the road, and then I don't remember what she did because I was too busy snitching the strawberries.

I thought it must be hard and scary, like canning (I know the basics of canning, and have helped countless times, but have never done it myself. Botulism scares me!)

But I tried it today. It's so easy! I did have to buy a potato masher today, though.

It's fairly cheap, too. One recipe cost about $5, and it made two jars. That's about what you'd pay for the overly-sweet store-bought stuff, and this is heavenly!

We've been enjoying strawberry shortcake, too. The boys were in awe of its wonderfulness, so I didn't have the heart to say no when they asked for seconds. Mmmmmm!

We made some of that a few weeks ago. I use the blender when I do it to mash up the fruit and then add the sugar/pectin to it. We put it on homemade scones and I was in heaven.

I like it chunkier than the blender makes it--or at least that's what my mom says! I also forgot to mention that I cut down the sugar to just 1 cup. I hate how sweet store-bought jellies and jams are.

I love homemade jam. :) Another kind you might want to try is triple berry. I love buying the frozen triple berry bag from Costco, and then making it into jam. It is delicious!
